Testing of surfaces in food establishments is a task of high importance. Microbes can live on surfaces for days or even weeks. Coming in contact with food or items used in food processing i.e. knifes, plates, bags, etc can contaminate a clean product rapidly.
The surface testing is performed with modern sampling methods using ISO standards.
